
 
 June 12, 2009. We were treated to a special presentation at 
Inacap. 
Inacap is a Technical University in Chile,which has a wonderful culinary program. They prepared a number of Chilean specialties for us to sample, and had a number of regional 
product producers present to show us their goods. My favorite was Pastel 
de Choclo, the national dish of Chile. It is a bit like our tamale pie. 
Inacap's preparation was so wonderfully fresh and sweet in its use of the corn. I found the 
Cereza de los Andes truly unique.
